Thankful Every Day




It has been a while since I've posted so there is a bit that I need to catch up on. Thanksgiving is coming up! We are going to have turkey, stuffing, green bean casserole, potatoes, corn, pumpkin pie, and pumpkin cookies. Yum, right? Whenever I think about Thanksgiving, I think of shades of reds, cinnamon, family, nutmeg, the color orange, rosemary, leaves, cooler weather, pumpkins, and hot chocolate. But do you know what I often forget when I think about Thanksgiving? I forget about God. But God is the one who gives me all the sights, sounds, tastes, and feelings of Thanksgiving. He is the one who has given me everything. There are so many blessings in my life, and He deserves all the praise for it. This Thanksgiving season, I want you to join me to remember that God is the reason for every day, every moment. Let's be thankful together.

Cookie dough/Fat bombs Recipe




 In my family, we buy bagels and cream cheese together. I will eat cream cheese with everything bagels, but for every other kind of bagel, I use butter. So then, we have a dilemma. How do we use up the cream cheese? I found a quick and easy answer: the recipe below! Side note: I altered someone else's recipe, but my whole family liked it, so I thought I would share it. :D Also, this recipe was for keto cookie dough, but I think of it more as fat bombs. 

Ingredients:

8oz cream cheese (softened)

3 Tbsp butter (softened)

2 Tbsp peanut butter

1/4 cup swerve/ stevia mix

1 tsp vanilla extract

Optional: keto friendly chocolate chips (I did not have these at the moment, so I made mine without it.)

Instructions: 

  1. Grab a mixer
  2. Cut the softened butter and cream cheese into squares and dump into bowl
  3. Add the peanut butter, sweetener, and vanilla to the bowl
  4. Mix the ingredients on cream butter and sugar mode
  5. OPTIONAL: if you have chocolate chips stir them in
  6. Line a cookie tray with parchment paper and scoop TBSPs of the mixture onto the tray
  7. Slid tray into the freezer and set a timer for an hour
Once timer is up enjoy! But note: DO NOT put the tray back into the freezer if there are leftovers. Instead, place them in the fridge. I made this mistake and it took a while for the middle of the bombs to unfreeze. Anyway, these tasted like awesome peanut butter bombs and my keto parents loved them. Even my sister (non-keto) liked them! Okay, Amber out!

Hey, readers! I am writing today to tell you about Scratch. It is a coding website where you can make cool games, animations, and much more. I have been working on two main projects for a month, but they take a long time to perfect. One of them is a Choose your own adventure game and the other is an animation about a teenage girl. Right now I am mostly working on the game. I am really excited about the finished project and I'm going to keep at it. 😊

Bad Luck with Bugs and Scorpions

Two days ago, I was stung by a wasp. It started off a normal day. I was picking up sticks in my front yard, in order for the lawn to be mowed. And as I bent over to pick up sticks by the edge of our property, I suddenly felt a stinging pain in my back. Instantly, I knew I'd been stung. This wasn't the first time. When I was I don't know...seven? I got stung by a bee. It stung me between my toes and let me tell you it was scary. It was definitely painful, but mostly I was terrified by the dead bug between my toes. Anyway, my mom came outside and helped me. Then when I was ten, I got stung by a scorpion during a camping trip. Excruciating pain. That one was the worst. Also, my parents were freaking out, because they thought it was poisonous. It wasn't, thank God. But back to my story. So my mother helped me once more and the spot doesn't hurt anymore and has stopped swelling. Well, what can I say? Bugs and scorpions seem to hate me. This is Amber signing off. Father's Day is Right Around the Corner!


Hey everybody!

Fathers day is coming up and since my father is on the keto diet I plan to make him a keto cherry cake. I'm very excited! I've wanted to try out a cherry cake recipe for a long time and now I'm actually gonna do it! (I'll post the recipe soon.) During this pandemic, I think it is especially important to take time and thank our dads for all they have done. Go, dads! :)

New camera!! 📸



Hey, everybody! Do you remember my post: Picture Taking is my Hobby? Well, if you haven't read it, then I suggest you do! Anyway, in that post, I say that I only take pictures on my phone. Well, I have finally bought a quality camera! Eeeek! Oh, I'm so happy about it. It has a 42 times zoom. The pictures are so clear, I just love it. 💗 The one I have now is actually a replacement for one that I bought a couple of weeks ago. The old one wouldn't show the pictures I'd taken. Thankfully, the new one works just fine! Did I tell you that I put photos in the fair? Well, I do usually, if not for the Coronavirus. Anyway, I hope that this camera will let me take better pictures to put in the fair next year. :)
