The Delicious Sunshine Salad






Our Traditional Dessert

     Since Thanksgiving is coming up, I thought I would tell you one of my family's traditional recipes! Every, Thanksgiving we make Sunshine Salad. It has many different sweet flavors that blend nicely! The name of this dessert is a funny story, though!



When my mother was little, my Great-Grandmother used to make two salads. One she called Sunshine Salad (a savory salad) and the other was Cottage Cheese Salad (a sweet mixture).  
Great-Grandma's version of Sunshine Salad had peas, mayonnaise, and greens in it. (Sorry Grandma, but that does not sound very good.) 
My mother (as a teen) asked my Great-Grandma the name of the sweet salad on the buffet table (she was actually pointing at the Cottage Cheese Salad.), but Great-Grandma told her the name of the other salad, the savory salad...it was Sunshine Salad 
Years later, my Mother asked my Great-Grandma to make Sunshine Salad again--thinking that she was in store for a sweet creamy dessert. 
Grandma said "Well, I need to get some peas then." 
My Mom was shocked! 
Mom responded, "I meant the one with cottage cheese!" 


Since then, my mother has always called the creamy, sweet dessert Sunshine Salad.  She thought that the name Sunshine Salad fit the sweet salad better than its original name Cottage Cheese Salad since the sweet salad has bright oranges in it like sunshine.  


So...when our family makes Sunshine Salad, we are making the yummy, creamy, sweet salad my Great-Grandmother used to call Cottage Cheese Salad.  We prefer the name Sunshine Salad! 




Ingredients:
  • 24 oz of cottage cheese 
  • Two 15 oz mandarin oranges cans
  • 1 packet of orange Jell-o
  • Half a bag of mini marshmallows
  • (Optional) Coconut flakes
Put those ingredients into a large bowl (In that order) and mix until fully blended. 



This is one of my favorite desserts! I hope you make and enjoy this! 

Also, it is good to bring to a party, because it takes so little time to make. 


That is why my family makes this quick and tasty dessert!
